My famous lasagna

Ingredients

For the Legendary Meat Sauce:

· 2 tablespoons olive oil
· 1 large onion, finely chopped
· 2 carrots, finely chopped
· 3 cloves garlic, minced
· 1 pound ground beef (80/20)
· 1 pound ground Italian sausage (mild or hot)
· 1 (28 oz) can crushed tomatoes
· 1 (28 oz) can tomato puree
· 1 (6 oz) can tomato paste
· 1 cup full-bodied red wine (like Chianti or Cabernet) or beef broth
· ½ cup whole milk (the secret weapon against acidity!)
· 2 teaspoons dried basil
· 1 teaspoon dried oregano
· 1 bay leaf
· 2 tablespoons fresh parsley, chopped
· Salt and freshly ground black pepper to taste
· 1-2 teaspoons sugar (optional, to balance acidity)

For the Cheese Layer:

· 32 oz (4 cups) whole-milk ricotta cheese
· 1 large egg
· ½ cup freshly grated Parmesan cheese
· ¼ cup fresh parsley, chopped
· 1 teaspoon salt
· ½ teaspoon black pepper

For Assembly:

· 1 package (16 oz) lasagna noodles (oven-ready OR regular, see note)
· 1 lb mozzarella cheese, freshly shredded (do not use pre-shredded!)
· ½ cup freshly grated Parmesan cheese
